Mac + Cheese Bites
Mac & cheese + football = a game-day win. Perfect for passing around during the game but filled with hidden protein and nutrients!
Ingredients
4 large eggs
8 oz (about 2 cups) elbow macaroni, cooked and cooled
2 cups sharp Cheddar cheese, shredded
1 cup Mozzarella cheese, shredded
1/2 cup heavy cream
1/4 cup unsalted butter, melted
1/2 cup panko breadcrumbs (for the crunchy topping)
Salt, black pepper, and garlic powder to taste
Directions
Preheat oven to 400°F. Lightly grease a mini muffin pan with nonstick cooking spray.
Whisk the eggs. In a large bowl, whisk together the 4 eggs, heavy cream, melted butter, salt, black pepper, and garlic powder.
Add the macaroni and cheese. Stir in the cooked and cooled macaroni, shredded Cheddar, and Mozzarella until everything is evenly coated.
Fill the muffin pan. Spoon the mac and cheese mixture into the prepared mini muffin cups, filling each to the top. Gently press the mixture down so the bites hold together after baking.
Add the crunch. Sprinkle each bite with panko breadcrumbs, pressing them lightly into the tops.
Bake for 15–20 minutes at 400°F, or until the tops are golden and the egg mixture is fully set. For food safety, cook until the egg mixture reaches 160°F.
Cool for 5 minutes before carefully removing the bites from the pan. Serve warm and enjoy!
