Baked Cheesy Corn Fritters

Crispy on the outside, cheesy and tender on the inside, these easy baked corn fritters bring together sweet corn, sharp cheddar, and eggs for a savory, golden bite that’s perfect for game day.

Ingredients

  • 3 large Natural Choice Eggs

  • 1 (15 oz.) can whole kernel corn, drained well

  • 3 tablespoons all-purpose flour

  • 3 tablespoons cornmeal

  • 1 cup shredded Cheddar cheese

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Optional: ¼ teaspoon garlic powder

Directions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly coat with cooking spray.

  • In a large bowl, whisk the eggs until well combined.

  • Add the drained corn, flour, cornmeal, Cheddar cheese, salt, black pepper, and garlic powder, if using. Stir until everything is evenly combined.

  • Scoop about 2 tablespoons of the mixture onto the prepared baking sheet for each fritter. Gently flatten each scoop into a small patty.

  • Bake for 10–12 minutes, flipping halfway through, until the fritters are set and golden around the edges.

  • Make sure the egg mixture reaches 160°F for food safety.

  • Let cool for a few minutes before serving. Enjoy warm!
